Age 28 (he says he feels 50) Jamie Lives in Blundellsands with a young family by the beach. He has been obsessed with cooking since he was a wee lad and is enthusiastic about what he does for a living. He co-founded Pickled Walnut with Mark Kershaw over 5 years ago now and has been instrumental in guiding it towards its many successes. Best meal out in the past 12 months? It has to be Marcus Wareing at The Berkeley. I worked here briefly when I was younger and always knew they cooked head and shoulders above most places in the Northwest. But now it appears they have gotten even better. The locality and composition of the dishes served was something that we aspire to. It is your last meal who would you invite to dinner? Well I would have my wife, my little boy, my mum and dad and if I was to have a celebrity it would be Russell Crowe and we would laugh at how much people mistake us for each other. In the food industry who do you most admire? When I was a young chef I would have said Marco Pierre white and Gordon Ramsey because that is who I idolised. Now I would say I most admire the chef Thomas Keller simply for his style and integrity. Sometimes we don’t have to go overboard with food we need to simplify and let the ingredients do the talking. Favourite Pastime Definitely going to the cinema! Looking forward too! Seeing what the future holds for our company. We have garnered a great reputation and are attracting some great events and customers so I would like to see that continue and also constantly enhance our offer. |
