Age (he says he feels 90) Trained under the tutelage of Jim Sines (High Moor Restaurant, Parbold), Mark has over twenty years experience in the industry. His experience is not only in the kitchen but also as a manager. Under his management "master McGrath's", a Southport based restaurant, went on to earn the Lancashire Restaurant of the Year Award. He later branched out into contract catering management and worked - alongside Jamie – to open the transformed piazza at the Metropolitan Cathedral. Best meal out in the past 12 months? Marcus Wareing in London, tasting the menu from start to finish each course excelled. It was a great insight as to the current trends in food. It is your last meal who would you invite to dinner? Close family and Cheryl Cole for reasons I cannot disclose. In the food industry who do you most admire? Growing through the years in catering I have always aspired to Auguste Escoffier and his classic cooking now I would say Michael Caines in the person to watch. Favourite Pastime Work! |
